Sumatra Ribang Gayo
This bean is dry processed in raised bed sun-dried in the Aceh region of Sumatra. The elevation for this region was between 1500 -1700. The process produced big fruits, winey aroma, syrupy mouthfeel, and complex earth tones. Hints of fermented banana, spiced rum, burnt sugars, and cedar. Dry processing this way takes several weeks in the sun to produce the level of fruitiness this bean has.
